Ingredients

  • 2 slices whole grain bread
  • 3 tbsp Sabra hummus
  • 3 radishes (thinly sliced)
  • ¼ medium cucumber (thinly sliced)
  • 3 slices fresh mozzarella
  • ½ medium avocado (sliced)
  • pinch coarse salt and freshly ground black pepper
  • ¼ cup shredded carrots and red cabbage
  • ¼ cup baby spinach


Method

  1. Spread both slices of whole grain bread with hummus. On one slice, stack the radish, cucumber, fresh mozzarella and avocado and sprinkle with coarse salt and freshly ground black pepper. Top with carrots, cabbage and baby spinach. Top with the other slice of whole grain bread.
