Easy 3 Ingredient Coconut Date Rolls taste like gooey soft caramels, but are secretly healthy, paleo, and vegan! The perfect two bite dessert or snack!

  • 1 cup pitted medjool dates
  • ⅓ cup unsweetened shredded coconut
  • 8 almonds (optional)


  1. Add the dates to a food processor and process until the dates are broken down and a sticky ball forms.
  2. Add the coconut to a shallow boll. Roll the date mixture into 1 inch balls and then roll them in the coconut to coat. Press and almond onto the top of each roll and enjoy!
