Ingredients

  • 110 g golden caster sugar
  • 70 g granulated white sugar
  • 115 g margarine / unsalted butter
  • ¼ tsp salt
  • 180 g plain flour
  • 1½ tbsp double cream
  • ½ tsp vanilla extract
  • 90 g chopped dates (I used organic dates)
  • 65 g fudge pieces


Method

  1. Preheat the oven to 180°C / 350°F / gas 4. Prepare your lined tin.
  2. Using an electric mixer use a paddle attachment and cream together the butter, golden caster sugar, granulated sugar and salt until nice and fluffy. This should take a few minutes.
  3. Add the cream and vanilla extract, mix it in and follow with the flour. Mix until everything is combined and comes together to form a dough.
  4. Add the chopped dates and fudge pieces, then mix so they are evenly distributed.
  5. Scoop out the dough and roll into medium sized balls, about the size of a golf ball. Place each ball on to the baking tray leaving enough space for the cookie dough to spread as it bakes. You may have to cook them in a couple of batches.
  6. Place the cookies in the oven for about 15 minutes. Check them after about 12 minutes if you want them slightly chewier than crunchy.
  7. Leave the cookies to cool then transfer them to an airtight container. Enjoy!
