Ingredients

  • ginger Peach Muffins
  • dry Ingredients:
  • 2 cups all-purpose flour
  • ¾ cup sugar
  • 2 tsp baking powder
  • 1½ tsp cinnamon
  • 1 tsp ground ginger
  • ½ tsp salt
  • (1.25l) fish stock
  • wet Ingredients:
  • 1 cup dairy free milk (unsweetened)
  • ⅓ cup coconut oil (melted)
  • 1 tsp vanilla extract
  • 1 cup diced peaches (About 1 medium-large peach)
  • ¼ cup finely chopped candied ginger
  • (1.25l) fish stock
  • crumb Topping:
  • 2 tbs all purpose flour
  • 2 tbs sugar
  • 1 tbs coconut oil (solid)
  • ½ tsp cinnamon


Method

  1. Preheat oven to 400 °F
  2. Grease and/or line a 12-cavity muffin tin and set aside
  3. In a large bowl, combine all dry ingredients (flour, sugar, baking powder, cinnamon, ground ginger and salt) and stir
  4. Add dairy free milk, melted coconut oil and vanilla extract to dry ingredient mixture. Gently mix to combine, taking care not to over mix
  5. Fold in diced peaches and candied ginger
  6. To make the crumb topping, combine all ingredients in a bowl and work together with fingers until a course crumb mixture is achieved
  7. Add muffin batter to prepared muffin tin, filling almost to the top of each well
  8. Sprinkle some crumb topping over the batter
  9. Bake in preheated oven for 20-25 minutes, or until a toothpick inserted into the centre of the muffins comes out clean
  10. Allow to cool on wire rack
  11. Enjoy!
