Simple, delicious homemade cherry jam, made with the goodness of chia seeds! Only 30 minutes required!

Ingredients

  • 2 cups frozen pitted cherries ((Just under 300g frozen) )
  • 3 tbs black chia seeds
  • 2 tbs agave nectar (* (Depends on how sweet you prefer) )
  • ½ tsp lemon juice


Method

  1. Heat frozen cherries in a saucepan over medium heat, stirring regularly for about 5-10 minutes
  2. As the fruit starts to break down, mash with a fork or masher until you are satisfied with the consistency, or mash just a little to keep it chunky
  3. Mix in the agave and lemon juice, and adjust the heat to reach a low boil
  4. Add the chia seeds and simmer for about 10 minutes, or until the jam starts to get thick (it won’t be quite as thick as a jam at this point)
  5. Remove from heat and let stand in covered saucepan for 10 minutes to allow the chia seeds to soak up more moisture
  6. Transfer to a jar and store refrigerator (the jam will continue to thicken in the fridge)
  7. Enjoy!
