Ingredients

  • 2 tbsp olive oil
  • 500 g lamb shoulder (diced)
  • 3 tsp moroccan spice mix
  • 1 tbsp chopped garlic
  • 3 peppers mixed (deseeded and diced)
  • 1 white onion (peeled & diced)
  • 1 tin Chickpeas 215g drained weight
  • 1 chopped tomatoes (can)
  • 600 ml chicken stock (good quality cubes or shopped bought)
  • 1 pinch sea salt (to taste)
  • 1 pinch black pepper (freshly ground, to taste)
  • 1 bunch fresh mint (finely chopped)
  • 1 bunch fresh parsley (finely chopped)
  • 1 bunch fresh coriander (finely chopped)
  • 75 g dried Apricots (chopped)
  • 25 g flaked almonds (to finish)
  • Couscous (steamed, to serve)
