Ingredients

  • 15 ounce cans black beans (drained and rinsed)
  • 1 egg
  • ½ cup plain oatmeal (quick or old-fashioned)
  • 2 teaspoons ground cumin
  • ½ teaspoon cayenne pepper
  • ½ cup cheddar cheese (shredded)
  • 2 tablespoons cilantro (chopped, optional)
  • ½ teaspoon extra-virgin olive oil (or olive-oil cooking spray)

Method

  1. In a small food processor or blender, combine 1 can of beans, egg, oatmeal, cumin, and cayenne. Pulse to process until nearly smooth, stirring between pulses as needed with spatula or wooden spoon. Transfer mixture to a large bowl and add remaining beans, cheese, and cilantro, if desired. Stir well to mix. Divide the mixture in the bowl into two equal portions. (This helps to make 4 equal-sized burgers with less guesswork.) Spread oil in the bottom of a large nonstick skillet, or mist lightly with cooking spray. Use a plastic spatula to scoop up half of one portion of burger mixture and place it in the pan. Use the spatula to form it into a patty about 4 inches across. Form one more burger, and then repeat this step with the remaining half of the black-bean mixture. Cook over medium heat for 8-10 minutes, turning halfway through, until crisp on both sides. Serve with lettuce, greens, pickles, or other desired toppings.
