- 2 tablespoons extra-virgin olive oil
- 1 tablespoon lemon juice
- 2 teaspoons red wine vinegar
- 1½ teaspoons dried thyme
- 1½ teaspoons dried oregano
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 pound boneless, skinless chicken breasts
- 4 whole-wheat pitas (6.5-inch)
Method
- In a large mixing bowl, stir together olive oil, lemon juice, vinegar, thyme, oregano, salt, and pepper. Cut chicken into 1½-inch cubes, place in marinade, and stir to coat. Marinate for 10–20 minutes. Preheat indoor or outdoor grill to medium-high heat. Thread chicken on skewers and cook for 4 minutes on each side, or until just cooked through. Serve on whole-wheat pita and garnish with tomatoes and fresh herbs, if desired.
