Ingredients

  • 2 cups desiccated coconut (optional additional for rolling)
  • 1 cup puffed rice
  • 50 g coconut oil
  • 3 tbsp honey
  • 2 tbsp coconut milk


Method

  1. Place coconut, puffed rice and oil in a food processor blitz until very fine
  2. Add honey and coconut milk and blitz until well combined and starting to come together, you may need an extra tablespoon of coconut milk
  3. Refridgerate the mix for approx 15 mins, this makes it easier to roll into balls
  4. Roll into 24 balls (approx 2 tsp fulls of mix per ball)
  5. Roll in additional desiccated coconut if wished
  6. Refrigerate for 1-2 hrs
  7. Serve
