Ingredients

  • 1 (0.25 oz.) pkg. active dry yeast {about 2 ¼ tsp.}
  • 1 tbsp honey
  • 1¼ cups warm water
  • 1½ tsp coarse salt
  • 3 cups whole wheat pastry flour + a few spoonfuls
  • 2 tbsp ground flax seed {optional}
  • 2 medium sweet apples (diced)
  • ½ cup walnuts (chopped)
  • 2 tbsp butter (melted)
  • 1½ tsp cinnamon
  • 2 tbsp brown sugar


Method

  1. Place yeast, honey and warm water in the bowl of a stand mixer. Whisk to combine. Allow to sit for 15-20 minutes, until mixture has puffed up. Fit mixer with dough hook. Stir in salt, then mix in flour, ½ cup at a time, with the mixer running on low. Mix in flax seed, if using. Allow dough to mix on low for 4-5 minutes, until a ball has formed. Dough should be slightly sticky. Mix in diced apple and walnuts until combined. Place a few spoonfuls of flour on a large piece of parchment paper. Transfer dough to the paper and form a ball. Place a damp cloth over the dough and allow to rise for about 1 hour or until dough has doubled in size. Transfer dough with the parchment paper into the crock pot. Set on low. Whisk together melted butter, cinnamon and brown sugar in a liquid measuring cup. Pour mixture over dough and swirl it into the dough with a butter knife. Place the lid on the crock pot and allow to cook for 1 to 2 hours, until internal temperature of bread reaches 190-200 degrees.
