Ingredients

  • 2 cups heavy cream
  • ⅔ cup sugar
  • 5 tbsps orange juice
  • (1.25l) fish stock (as needed, Fresh fruit - for garnish)


Method

  1. Whisk cream and sugar together and bring to a boil on medium heat. Simmer for 3 minutes.
  2. Turn off the heat and stir in orange juice. Cool for 10 minutes.
  3. Pour into individual ramekins or bowls. Chill for at least 6-8 hours or overnight.
  4. Serve chilled topped with fresh fruit.
