This Spiked Caramel Apple Cider Cocktail tastes like a caramel apple on a stick, but with a splash of rum! Homemade no-cook caramel sauce adds great flavor!

Ingredients

  • 1 cup packed pitted medjool dates
  • ⅓ cup full fat coconut milk
  • 1 teaspoon vanilla extract
  • 2 teaspoons pie spice
  • 2 cups spiced apple cider
  • 4 oz spiced rum
  • ¼ cup caramel sauce


Method

  1. Add the dates to a bowl and cover with boiling water. Let sit for 10 minutes.
  2. Drain the dates and add them along with the remaining ingredients into a high-speed blender. Blend, scraping down the sides as necessary, until the caramel is a smooth even sauce.
  3. Add all the cocktail ingredients into a shaker with ice. Shake until chipped. Divide the drink between two ice-filled glasses and serve.
