These Syn Free Breakfast Bakes are a great breakfast, brunch or lunch recipe and syn free if you use the 10g of cheese per serving as 1/4 of your HEA (otherwise it's 1.5 syns per portion).

Ingredients

  • 2 eggs
  • ½ tin baked beans
  • 4 bacon Medallions
  • 2 mushrooms (sliced)
  • 20 g low fat cheddar cheese (as either part of your hea)
  • olive oil frylight


Method

  1. If using the oven preheat to 190°C.
  2. Lightly spray a 2 portion ovenproof serving dish or 2 individual ramekins with Frylight.
  3. Heat a frying pan over a medium heat, spray with Frylight, then add the bacon and mushrooms. Gently fry until they start to colour.
  4. Arrange the bacon and mushrooms evenly in serving dish.
  5. Spoon the beans over the bacon and mushrooms.
  6. Make a well with the spoon and crack the eggs on the top of ingredients.
  7. Sprinkle the egg with some salt and pepper & top with cheese.
  8. Either bake in the preheated oven for 15 - 20 minutes or microwave on high for at least 60 - 90 seconds (don\'t forget to cover with cling film in the micro wave). Make sure the egg is cooked as you like it and serve.
