Delicious Spicy Sweet Potato, Red Pepper and Carrot Soup – a firm family favourite

Ingredients

  • 1 sweet Potato (large, peeled and chopped)
  • 1 carrots (large, finely chopped)
  • 1 red pepper (finely chopped)
  • 2 cloves garlic (crushed)
  • 1 onion (medium, finely chopped)
  • ½ tsp Turmeric
  • 1 tsp cumin seeds
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • pinch cayenne pepper
  • 1 litre chicken stock (or vegetable)
  • salt
  • pepper (to season)
  • cooking oil spray
  • coriander (finely chopped)


Method

  1. Spray a large deep saucepan over a medium high heat with spray oil.
  2. Add onion, garlic, cumins seeds and turmeric and fry for a few mins to soften.
  3. Add carrots, red pepper, cumin, coriander, paprika and pinch of cayenne and stir well to coat
  4. Add in the stock and sweet potato
  5. Bring to a boil and then simmer for 1 hour until all vegetables are softened
  6. Roughly blend the soup with a stick blender, (you don’t want to over blend, as the soup is delicious with some chunks of vegetables)
  7. Season with salt and pepper to taste
  8. Serve topped with fresh coriander
