Vegetarian version of fajitas with sauteed veggies flavored with homemade taco seasoning. Grilling the veggies is a better option and makes them taste much better. Roasting is also another great option to cook the veggies.

Ingredients

  • 4 ~ 6 Flour Tortillas
  • 4 poblano Chilies (- chopped)
  • 2 peppers (- medium, chopped)
  • 1 zucchini (Medium , chopped into thick slices)
  • 1 summer Squash (Medium , chopped into thick slices)
  • 1 onion (- small, sliced into thick slices)
  • 2 cups Broccoli (- cut into florets)
  • 1 ~ 2 tsps Taco (seasoning - (store bought or homemade))
  • to taste Salt
  • cheddar Monterey jack (Grated , , Pepperjack - as needed)
  • sour cream (- as needed)
  • salsa (- as needed)


Method

  1. Cook the Veggies: Saute, grill or roast the veggies until crisp tender. Season with salt, pepper and taco seasoning.
  2. If sauteing, then cook the veggies in batches to evenly cook them.
  3. To serve: Place the veggies along the center of the tortilla, top with the toppings of choice, fold and eat. Enjoy!!
