- 2 tbsp olive oil
- 1 onion (large, chopped)
- 2 stalks celery (chopped)
- 3 clove garlic (minced)
- 28 oz diced tomatoes (can)
- 2 cup vegetable broth
- 1½ cup dried brown lentils (or green)
- 2 tsp dried basil (or italian seasoning)
- 1 tsp salt
- 8 cup mixed mushrooms (sliced, such as cremini, shiitake, oyster)
- 125 ml dry white wine (or vegetable broth)
- 4 lb Yukon gold potatoes
- ⅓ cup milk (or half-and-half cream)
- 2 tbsp butter
- 1½ cup black diamond old cheddar cheese (shredded)
- 2 green onions (thinly sliced)
