  • 2 tsp dried basil (or italian seasoning)
  • 1 tsp salt
  • 8 cup mixed mushrooms (sliced, such as cremini, shiitake, oyster)
  • 125 ml dry white wine (or vegetable broth)
  • 4 lb Yukon gold potatoes
  • ⅓ cup milk (or half-and-half cream)
  • 2 tbsp butter
  • 1½ cup black diamond old cheddar cheese (shredded)
  • 2 green onions (thinly sliced)
