Ingredients

  • 1 lb chicken breasts (cleaned + pounded thinly)
  • 1 lb brussels sprouts (halved)
  • 10 oz roasted garlic cauliflower
  • ¼ cup lime juice
  • ¼ cup olive oil
  • 1 tablespoon lime zest
  • 1 tablespoon coconut aminos
  • 1 teaspoon ginger (fresh grated)
  • ½ teaspoon pepper
  • ¼ teaspoon garlic powder


Method

  1. In a bowl, whisk together marinade. Place chicken in marinade + allow it to sit for at least 20 minutes for best flavor (overnight is even better!)
  2. While the chicken is marinating, prepare a baking sheet with parchment paper + preheat oven to 450
  3. Place chicken and brussels sprouts on the baking sheet. Pour remaining chicken marinade over halved brussels sprouts and bake at 450 for 20 minutes.
  4. Added Path of Life Roasted Garlic Cauliflower to the baking sheet with the brussels sprouts + chicken. Broil on high for 3 minutes.
  5. Serve + enjoy!
