Ingredients

  • dry Ingredients:
  • 1.25 cup all-purpose flour
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 1 cup vegan chocolate chips
  • wet Ingredients:
  • 1 flax egg
  • 0.25 cup coconut oil
  • 0.5 tbsp brown sugar
  • 0.25 cup cane sugar
  • 2 tbs dairy free milk
  • 0.5 tbs vanilla extract

Method

  1. For the flax egg, combine ground flax and warm water, and set aside to thicken
  2. In a large bowl, combine melted coconut oil and sugars and mix with an electric or stand mixer
  3. Mix in flax egg, milk and vanilla extract to oil and sugar mixture
  4. Add the flour, baking soda and salt to the wet ingredients and mix
  5. Fold in chocolate chips
  6. Chill dough for 30 minutes (at least)
  7. Preheat oven to 350 °F
  8. Scoop 1.5 tbs of dough, roll into a ball, and place on parchment lined baking sheet
  9. Bake for 7-9 minutes, or until the edges start to get golden brown*
  10. Allow to cool on baking sheet for a couple minutes, then transfer to a wire cooling rack to finish cooling
  11. Enjoy!
