Method

  1. Preheat oven to 350°F. Lightly grease a 9"x5" loaf pan.
  2. In a large bowl, mix together sugar, eggs (or egg replacer mixture), oil and vanilla.
  3. In a separate bowl, combine the flours, baking powder, baking soda, salt and spices.
  4. Add the dry ingredients to the wet ingredients and mix well.
  5. Stir in the oats, applesauce and chopped walnuts. Mix well to combine.
  6. Pour the batter into the prepared loaf pan and bake for 55~60 minutes or until a cake tester inserted into the center comes out clean. Remove the bread from the oven and cool completely before slicing.
