These vegan pancakes are SUPER fluffy and SUPER delicious! They are so ridiculously easy to make, you’ll never use a pre-made pancake mix again!

Ingredients

  • dry Ingredients:
  • 1 cup all-purpose flour
  • 2 tbs sugar
  • 1 tbs baking powder
  • 0.5 tsp salt
  • wet Ingredients:
  • 1 cup dairy free milk
  • 1 tbs apple cider vinegar
  • 0.5 tsp vanilla extract

Method

  1. To a medium bowl, add all dry ingredients. Stir to combine
  2. Add wet ingredients to the dry mixture and whisk together, taking care not to over mix
  3. Let batter sit for a couple minutes while your pan/griddle heats to medium-low
  4. When your cooking surface is heated, lightly grease it (I use a coconut oil spray)
  5. Pour about ¼ cup of batter onto your cooking surface
  6. When the top begins to bubble, flip the pancake and cook until golden
  7. Serve warm with pure maple syrup, jam, peanut butter, fresh fruit, the options are endless!
