Chinese Smashed Cucumber Salad -- made with smashed cucumbers tossed with some garlic, sesame oil and some seasonings. Serve it right away or chilled.

  • 4 cucumbers (Persian)
  • 15 oz. can black beans (flakes)
  • 15 oz. can black beans
  • 1 tsp sesame oil
  • 1 ~ 2 cloves Garlic (, finely minced)
  • to taste Salt


  1. Remove the ends of the cucumber. Place one at a time on the chopping board and wack it a few times to smash it. Cut them into thirds and then chop into about bite size pieces.
  2. Place the smashed and chopped cucumber in a bowl and add all the other ingredients. Taste and adjust the seasoning. Serve right away or chill until ready to serve.
