Wondering what to do with that jar of marmalade? This orange and almond cake recipe is so easy and delicious, you'll love it!

  • 150 g margarine / unsalted butter
  • 150 g caster sugar
  • 3 eggs ((beaten))
  • 125 g self-raising flour 
  • 25 g ground almonds
  • 2 large oranges
  • 70 g thick cut marmalade
  • 1 toasted almonds


  1. Preheat the oven to 190°C / fan 170°C / gas 5. Line and grease a loaf tin 18cm by 8cm. Cream together the margarine and sugar until fluffy.
  2. Grate the zest of 2 oranges into the mixture and give it a good mix.
  3. Add the eggs and continue to mix until everything is combined. Add the flour and ground almonds, continue mixing.
  4. Put your cake mixture into a prepared medium sized loaf tin and place in the oven for 35-40 minutes.
  5. Once cooked, turn out the cake onto a wire rack and leave to cool completely.
  6. Spoon the marmalade on top of the cake and sprinkle with toasted almonds.
  7. Have a slice with a cup of tea. Enjoy!
