Ferrero Rocher Cookies
The Honey Blonde
- 2 eggs ((beaten))
- ½ cup sugar (plus 2 tbsp)
- 1 cup butter (softened)
- ½ tbsp brown sugar
- 1 tsp vanilla extract
- 2 tsp hazelnut extract (optional)
- 2 cups flour
- 2 tsp espresso powder
- ¾ tsp baking soda
- 1 tsp salt
- 4 oz chocolate chips
- 8 chopped Ferrero Rocher candy (chopped)
- Preheat oven to 350 degrees. Whip together the eggs and granulated sugar until foamy. Add in butter, brown sugar, and vanilla and beat until smooth.
In a separate bowl mix together flour, espresso powder, baking soda, and salt. Pour slowly into the butter mixture and mix until almost combined.
Fold in chocolate chips and chopped candy. Spoon about 1 tbsp of dough onto a prepared baking sheet, 1 inch apart. Bake for 10-15 minutes, or until golden brown.
