Ingredients

  • 2 pears
  • ¼ cup sugar
  • 2 cups water
  • 150 g dark chocolate
  • ½ cup sugar
  • 90 g butter
  • 1 cup hazelnut meal
  • 3 eggs ((beaten))


Method

  1. Preheat the oven at 180 degrees Celsius.
  2. Prepare a 20 cm round pan with butter and baking paper and set aside.
  3. Clean, core and peel the pears and cut them into eighths.
  4. Combine sugar and water together in a big saucepan over medium-high heat and add the pear slices.
  5. Let them cook for 12-15 minutes, drain and set aside.
  6. Melt chocolate in the bain-marie, remove from the heat and add the butter.
  7. Mix well until butter is melted then add sugar and hazelnut flour and mix again.
  8. Meanwhile, separate the white from the yolk and once the chocolate mix has slightly cooled add the egg yolks and mix well.
  9. In a clean bowl pour the egg whites and whip them until firm peaks form.
  10. Fold the egg whites into the chocolate mixture being careful not to break the structure.
  11. Pour the batter into the tin and arrange the pear slices on top.
  12. Bake for 30-35 minutes, or until a toothpick inserted in the middle comes out clean.
  13. Let it cool completely before removing the cake from the pan.
