Ingredients

  • 2 thick cut pork chops
  • juice of one orange
  • juice of one lemon
  • juice of one lime
  • 1 garlic clove, smashed
  • salt and pepper
  • olive oil ((divided))
  • ½ tsp cumin
  • ½ tsp chili powder
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • ¼ tsp oregano
  • pinch of cayenne


Method

  1. Place the pork chops in a large dish with a lid or zip-top bag. In a bowl or measuring cup mix together the juices, garlic, salt and pepper. Pour about 3/4 of the mixture over the pork chops. Place in the fridge and marinate for at least 1 hour, or overnight. Remove the pork chops from the marinade and pat dry with a paper towel. Mix together the spices and rub on both sides of the pork chop. In a pan over medium high heat, coat surface with about 2 tsp of olive oil. Place pork chops in pan and sear on both sides, about 2-3 minutes on each side. Once seared, add in reserved marinade and cover with a lid. Cook for about 10 minutes, or until pork reaches an internal temperature of 160 degrees.
