Paleo Cuban Pork Chops

A Paleo and Whole 30 approved recipe for pork chops that are packed with flavor!
Ingredients
- 2 thick cut pork chops
- juice of one orange
- juice of one lemon
- juice of one lime
- 1 garlic clove, smashed
- salt and pepper
- olive oil ((divided))
- ½ tsp cumin
- ½ tsp chili powder
- ¼ tsp onion powder
- ¼ tsp garlic powder
- ¼ tsp oregano
- pinch of cayenne
Method
- Place the pork chops in a large dish with a lid or zip-top bag. In a bowl or measuring cup mix together the juices, garlic, salt and pepper. Pour about 3/4 of the mixture over the pork chops. Place in the fridge and marinate for at least 1 hour, or overnight. Remove the pork chops from the marinade and pat dry with a paper towel. Mix together the spices and rub on both sides of the pork chop. In a pan over medium high heat, coat surface with about 2 tsp of olive oil. Place pork chops in pan and sear on both sides, about 2-3 minutes on each side. Once seared, add in reserved marinade and cover with a lid. Cook for about 10 minutes, or until pork reaches an internal temperature of 160 degrees.
