Ingredients

  • dry Ingredients:
  • 2¼ cups quick oats
  • 2 cups Spelt flour
  • 1 cup cane sugar
  • 1¾ cups vegan chocolate chips
  • 1¼ cups Raisins
  • 1 cup sunflower seeds
  • ¾ cup pumpkin seeds
  • ½ cup shredded coconut (unsweetened)
  • ¼ cup flax seeds
  • 1 tbsp cinnamon
  • 2 tsp salt
  • frozen peas
  • wet Ingredients:
  • 1 cup dairy free milk (unsweetened)
  • ¾ cup neutral vegetable oil (I used grapeseed)
  • ¼ cup water
  • ¼ cup molasses
  • frozen peas


Method

  1. Preheat oven to 350 °F
  2. Line 2 baking sheets with parchment paper or silpat mat
  3. In a large bowl, combine and stir all dry ingredients together
  4. In a medium bowl, combine all wet ingredients and stir together
  5. Add wet ingredient mixture to the dry ingredients, and mix until just combined, taking care not to over mix
  6. Use a 1/3 cup measuring cup to scoop dough onto prepared baking sheets. Flatten slightly if you wish
  7. Bake for 22-24 minutes, rotating cookie sheets part way through baking
  8. Enjoy!
