Senegalese Quinoa-Mango salad -- This salad uses seasonal fresh produce and is very tasty and refreshing. The cucumber, tomatoes and the herbs are from my backyard, so it is a great way to use up your summer harvest. It is a great addition to picnics or potlucks.

Ingredients

  • 1 cup quinoa (Cooked)
  • 1 mango (Small Ripe , peeled and diced)
  • 1 cucumber (Small , peeled and diced)
  • 2 tbsps red onion (, finely chopped)
  • 3 parsley (tbsp Fresh , finely chopped)
  • 3 mint (tbsp Fresh , finely chopped)
  • ½ grape tomatoes (cup , halved)
  • 2 Lemon Lime juice (tbsp /)
  • 3 ~ 4 olive oil (tbsp)
  • salt Pepper (To taste &)


Method

  1. In a small bowl, combine lime/ lemon juice, salt and pepper. Drizzle olive oil and whisk until the dressing emulsifies.
  2. In a mixing bowl, combine quinoa, herbs, mango, onion, tomatoes and cucumber. Mix well and stir in the dressing. Serve right away and enjoy!!
