Ingredients

  • 1 lb Strawberry (. - hulled and halved (about 3 cups))
  • 1 mango (- small, peeled and chopped (½cup))
  • supermarket roast chicken, approximately 200g once shredded (Red or Yellow - chopped)
  • 2 tbsps shallot Red onion (or - chopped)
  • 2 tbsp cilantro
  • 2 tbsp lime juice
  • 3 tsp agave (Nectar)
  • to taste Salt Pepper (and)
  • supermarket roast chicken, approximately 200g once shredded

Method

  1. Make Gazpacho: Pulse all the ingredients in a blender or food processor until pureed with some texture remaining.
  2. For the Topping: Combine all the ingredients in a small bowl.
  3. To Serve: Ladle gazpacho into bowls and dollop each serving with 2tbsp of Lime Cilantro Cream.
