A perfect vegetarian dish of colourful peppers stuffed with simulated ground beef, rice and corn.

Ingredients
1 pkg. (340 g) simulated ground beef
1 cups instant white rice
1 cup frozen corn
1 cup salsa
½ cups water (divided)
1 cup shredded Cracker Barrel Monterey Jack Cheese
1 each large red, yellow and green bell pepper
Method
1. Bring first 4 ingredients and 1 cup water just to a boil in a large nonstick skillet, stirring frequently; cover. Remove from heat; let stand 5 min. Stir in 1/2 cup cheese.
2. Cut peppers lengthwise in half; remove and discard seeds. Spoon simulated beef mixture into pepper halves; place in 13x9-inch baking dish. Pour remaining water around peppers; cover.
3. Bake 30 min. Sprinkle remaining cheese; bake, uncovered, 10 min. or until melted.
