Vegan Oat Fudge Bars (Starbucks Copycat)

All the rich, chocolatey goodness of your favourite Starbucks Oat Fudge Bars, made totally vegan!
Ingredients
- oat Layer:

- 1 flax egg (1 tbs ground flax + 3 tbs warm water)
- 1 cup all-purpose flour
- 1½ cup oats (quick or rolled)

- fudge Layer:
- (I used this kind)

- 2 tbs vegan Butter

Method
- Preheat oven to 350 F
- Line an 8x8 pan with parchment paper and grease with cooking spray (make sure to leave an overhang of parchment paper for easy removal later!)
- For the flax egg, combine ground flax and warm water in a small bowl and stir. Set aside to thicken
- Using a stand mixer or electric mixer, cream vegan butter and both types of sugar
- Add the flax egg and mix again to combine
- Add in the flour, baking soda, and oats with butter mixture
- Spread ¾ of the oat dough into prepped baking pan. Spread to all edges using a spoon
- In a small pot on low-medium heat, melt together the vegan condensed milk, chocolate chips, vegan butter, and vanilla, constantly stirring to avoid burning
- Pour melted chocolate over oat layer and spread evenly
- Top the chocolate layer with what is left of the oats
- Bake for 20-25 minutes, or until edges begin to brown
- Allow to cool before slicing into 9 squares
