  • 1 cup avocado (mashed)
  • 1 cup sugar
  • 2 eggs
  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup milk
  • ½ tsp almond extract
  • 2 tbsp turbinado sugar (optional)


  1. Preheat oven to 350 degrees. Line a muffin tin with muffin tin liners. In a large bowl cream together avocado and sugar until very few clumps of avocado remain. Mix in both eggs until smooth.

    Then mix in flours, baking soda, baking powder, and salt. Finally, mix in the milk and almond extract. Portion the batter between the muffin tins.

    Sprinkle turbinado sugar on top then bake for about 20 minutes, or until tops are slightly brown and a toothpick comes out clean. Let cool for 5-10 minutes before serving.
