Try this creamy but healthy avocado pesto pasta. It's super easy to make and tastes absolutely delicious!

  • 2 ready cooked chicken breasts (shredded)
  • 120 g chorizo (cubed)
  • 250 g linguine pasta
  • 2 avocados
  • 2 cloves of garlic
  • 20 g fresh basil
  • 90 g pine nuts
  • ½ tsp salt
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice
  • 4 tbsp Parmesan cheese
  • 1 tbsp extra virgin olive oil
  • 2 tbsp milk
  • black pepper (seasoning )


  1. Bring a large pan of salted water to the boil. Add the linguine and cook according to the instruction on the packet.
  2. Place the avocado, garlic, basil, pine nuts, salt, lemon zest, lemon juice, parmesan, milk into a blender and season with black pepper. Whiz it all up until smooth.
  3. Cook the chicken and chorizo in a pan until warm.
  4. When your pasta is cooked, drain it then add the oil followed by the sauce. Stir into your pasta until everything it combined. Heat through on the hob on a medium heat for about 3-4 minutes so the garlic cooks through.
  5. Serve your pasta in a bowl and sprinkle the chicken and chorizo on the top of your pasta. Enjoy!
