  • ⅔ cup rye
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • of salt
  • 3 eggs ((beaten))
  • 1 tbsp brown sugar
  • ⅔ cup olive oil ((divided))
  • ⅔ cup yoghurt
  • ½ cup boiling water or coffee
  • ½ cup unsweetened dark cocoa
  • ½ cup chocolate chips


  1. Preheat oven to 180 degrees.
  2. Prepare a muffin tin with muffin liners.
  3. Mix the egg and sugar until well incorporated.
  4. Add the olive oil and yoghurt and mix well.
  5. In another bowl mix the boiling water or coffee with cocoa powder until well mixed and set aside.
  6. Mix rye flour, all-purpose flour, salt, baking powder and baking soda.
  7. Add the dry ingredients to yoghurt, eggs and oil mixture.
  8. Once the wet and dry ingredients are mixed add the cocoa mix and make sure is it well incorporated into the batter.
  9. At the end fold the chocolate chips.
  10. Pour the batter into the muffin tin.
  11. Bake in the preheated oven for 20-22 minutes, or until a toothpick inserted in the middle comes out clean.
