  • 1 large avocado
  • 2 cups spinach
  • 2 cups coconut milk ((from a carton))
  • ¼ cup raw cacao powder
  • 2 tablespoons maple syrup (adjusted to taste)
  • 1 teaspoon vanilla extract
  • ½ cup chia seeds


  1. Add all the ingredients, except the chia seeds, into a blender and blend until silky smooth, scraping down the sides as needed.
  2. Pour the mixture into a bowl and whisk in the chia seeds. Cover and let chill in the fridge for 4 hours, or until the chia seeds have plumped up. Serve with desired toppings.
