Ingredients

  • 4 chicken breasts
  • 4 bacon Medallions
  • 80 g Reduced Fat Cheddar (for half of a HEA or 3 Syns per portion)
  • ½ onion (diced)
  • 2 cloves garlic (crushed)
  • 1 400g/14oz can Chopped Tomatoes
  • 1 tbsp tomato puree
  • ½ lemon (juice only)
  • 1 tbsp Schwartz Perfect Shake BBQ Classic Seasoning (this particular one is Syn Free)
  • ¼ tsp smoked paprika (you can use chilli powder or normal paprika if you don't have this )
  • 1 tbsp balsamic vinegar
  • 2 tbsp Worcestershire sauce
  • 2 tbsp white wine vinegar
  • 1 tbsp Franks Buffalo Wings Hot Sauce
  • 1 tsp mustard powder
  • 1 tsp Granulated Sweetener


Method

  1. Take each chicken breast, wrap a bacon medallion around the middle and secure it with a cocktail stick
  2. Set the chickens aside, then add all of the remaining ingredients into the slow cooker and stir well
  3. Place the chicken on top and replace the lid. Cook on high for 2.5 - 3 hours (or low if you're leaving it on all day)
  4. When the time is up check that the chicken is cooked. Remove it from the slow cooker and set aside
  5. Blitz the sauce with a stick blender until smooth
  6. Place the cooked chicken in an ovenproof dish and remove the cocktail sticks
  7. Pour the sauce over the chicken breasts and top with cheese. Divide the cheese equally between all for chicken breasts
  8. Place under a hot grill until the cheese is melted and a nice golden colour

  11. Place the chicken on top and replace the lid. Cook for 1 hour at 180°C
  12. When the time is up check that the chicken is cooked. Remove it from the dish and set aside
  13. Blitz the sauce with a stick blender until smooth
  14. Place the cooked chicken in an ovenproof dish and remove the cocktail sticks
  15. Pour the sauce over the chicken breasts and top with cheese. Divide the cheese equally between all for chicken breasts
  16. Place under a hot grill until the cheese is melted and a nice golden colour
