Lemon Poppy Seed Pancakes ~ a light citrusy recipe perfect for a special spring brunch, or any time you just want to treat yourself to something special!
Ingredients
- dry ingredients
- ¾ cup all-purpose flour
- ¼ cup whole wheat flour
- ⅓ cup sugar
- 1½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- wet ingredients
- ⅓ cup buttermilk
- ¾ cup sour cream or Greek yogurt
- 2 lemons zest
- ¼ cup fresh lemon juice (about 2 lemons)
- 3 tbsp butter (melted)
- 1 egg
- 1½ tsp vanilla extract
- ⅓ cup Poppy seeds
Method
- Whisk together the dry ingredients.
- In a separate bowl, blend the wet ingredients together and fold in the poppy seeds.
- Add the wet to the dry and mix just until combined, don't over mix, you want your pancakes to be fluffy! Lumps are fine.
- Cook on a lightly greased griddle until lightly golden on both sides.
- Serve hot with maple syrup.
