A low-carb, healthy lettuce wrap recipe with a South of the border kick!

  • 1 lb lean ground turkey
  • 2 small bell peppers (diced)
  • 1 small Onion (diced)
  • 1 cup diced jimica
  • ½ cup frozen corn kernels
  • 2 gloves garlic (minced)
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp oregano
  • ½ tsp cumin
  • ¼ tsp cayenne pepper
  • ¼ tsp chipotle chili powder
  • salt and pepper to taste
  • juice of lime
  • 1 head boston or live lettuce leaves (washed and dried)


  1. In a large skillet over medium heat, add 1 tsp olive oil and ground turkey. Begin browning. Add onion, bell pepper, jimica, corn, and garlic, and sautee until turkey is brown and vegetables are soft.

    Stir in spices and lime juice. Continue cooking for another 2-3 minutes until juice has evaporated.

    Serve family style, with lettuce leaves stacked on a platter and turkey in a large serving bowl so everyone can create their own lettuce wrap.
