Potato Salad with Mustard and herbs is a delicious side dish to serve at your next barbecue or a picnic or any other summer party you are planning for.

Ingredients

  • 3 medium Potatoes, peeled and cubed
  • 3 scallions (chopped)
  • 1 tbsp Herbed Mustard*
  • 3 tbsp mayonnaise
  • 2 tbsp fresh parsley
  • to taste Salt Pepper


Method

  1. Place potatoes in a saucepan, along with water enough to cover the potatoes by 1". Bring to a boil, lower the heat and simmer the potatoes until fork tender, about 12~15 minutes.
  2. In the meantime, whisk the mustard, mayonnaise, salt and pepper in a mixing bowl.
  3. Drain the potatoes well and add them to the bowl along with scallions and parsley. Mix well and serve at room temperature.
