Ingredients

  • 1 mango (Raw - medium, peeled and diced)
  • 1 onion (- medium, finely chopped)
  • ¼ tsp Turmeric
  • 2 tbsp Jaggery
  • to taste Salt
  • 3 tbsp Coconut (Dry grated)
  • 2 tsp Cumin seeds
  • 1 tbsps Coriander seeds
  • 4 - 6 chilies ((adjust according to taste) Dry Red)
  • - 2 cloves Garlic
  • 1 ginger (" - piece, grated)


Method

  1. Make the Spice paste: Grind all the ingredients listed under Masala into a smooth paste adding some water if needed.
  2. To make the Curry: Heat 2tbsp oil in a saute pan, add the chopped onions and cook until they turn translucent, about 4-5 minutes.
  3. Add turmeric, mango pieces and masala paste. Mix well and add ½ cup water and salt, cover the pan and cook until mango is cooked and fork tender. Mango doesn't have to be cooked for too long, it should still keep its shape, so cook for about 8-10 minutes tops.
  4. Finally add jaggery and cook for another 2 minutes. Serve with steamed rice.
