Thyme Roasted Carrots are a gorgeous addition to the dinner table. Perfect if you are tired of the same-old side vegetable dishes!

  • 8 carrots
  • 2 tablespoons olive oil ((divided))
  • 4 sprigs fresh thyme ((use the leaves only))
  • salt & pepper to taste


  1. Preheat oven to 375F. Brush the carrots with olive oil, season with thyme leaves, salt & pepper. Roast for 25-30 minutes (or until desired done-ness - test with fork). Serve warm.
