Ingredients

  • half a bunch Spinach (, chopped)
  • 1 onion (- medium, chopped)
  • 2 tomatoes (- medium, chopped)
  • 1 green Chili (- chopped)
  • 2 cloves garlic (- finely minced)
  • 1 tbsp peanut butter ((add more if you like))
  • to taste Salt Pepper (&)
  • 1 tbsp Parsley Cilantro (& - each, chopped)


Method

  1. Add 2tsp oil in a saute pan; add onions and cook till they turn lightly browned around the edges.
  2. Add the garlic, tomatoes, herbs, green chili, salt and pepper. Cook for 5~6 minutes or until tomatoes turn mushy.
  3. Next add the chopped spinach, cover and cook till spinach is cooked through, about 4~5 minutes.
  4. Finally add peanut butter and cook till heated through, about 2~3 minutes. Serve with steamed rice.
