Ingredients

  • chocolate Layer:
  • 1 cup vegan chocolate chips (Plus 2 tbs)
  • ½ tbs coconut oil (melted)
  • banana LAYER:
  • 1 large banana (24 slices)
  • almond Butter Layer:
  • ⅓ cup almond butter
  • ½ tbs coconut oil (melted)
  • pretzel Layer:
  • 24 mini pretzel twists


Method

  1. Prep 24 mini baking cups (1.25", the type used for mini muffins/candy) by placing them onto a baking sheet or in a mini muffin pan
  2. Slice your banana(s) into 24 rounds. Set aside
  3. Melt the vegan chocolate chips and 1/2 tbs of coconut oil together over a double boiler or in the microwave (be careful not to burn if using a microwave)
  4. In a small bowl, combine almond butter and 1/2 tbs of melted coconut oil and stir together (the consistency should still be thick, but a little easier to pour)
  5. Spoon about 1 tsp of melted chocolate into the bottom of each muffin liner. Set aside remaining chocolate
  6. Place a slice of banana on top of the melted chocolate
  7. Spoon some almond butter on top, enough to cover the top and sides of the banana
  8. Spoon about 1/4 tsp of the remaining melted chocolate on top of the almond butter
  9. Place 1 mini pretzel twist on the top
  10. Place your baking pan or muffin tin into the freezer for about 30 minutes to allow the bites to set
  11. Once they are set, store in an airtight container/bag in the freezer
  12. When ready to eat, remove from the freezer and allow to sit at room temperature for 2-3 minutes
  13. Enjoy!
