Ingredients

  • 1 cup Brown Rice White Rice (/)
  • 1 onion (- small, finely chopped)
  • 1 carrot (- small, finely chopped)
  • 1 green Chili (- slit)
  • (1.25l) fish stock (+ paste)
  • 1 pepper red pepper (Green or red - small, finely diced)
  • (1.25l) fish stock
  • 2 eggs (- lightly whisked)
  • (1.25l) fish stock (Red)
  • 1 tsp soy sauce
  • to taste Salt


Method

  1. Heat 2tsp oil in a pan; add onions and green chili. Sauté till the onions turn translucent, add carrots and other veggies.
  2. Cover and cook until the veggies are tender, about 5 minutes.
  3. Add chili powder, soy sauce, salt and pepper. Mix well.
  4. Add eggs and cook until they are set or done to your liking. If using cold rice, microwave for just a minute to heat it up.
  5. Finally add rice to the egg mixture, mix well and cook for another 2 minutes. Serve hot.
