Here's another super simple, yer super tasty Thanksgiving recipe with Sweet Potatoes. Sweet potatoes are cooked in a blend of maple syrup and apple cider vinegar. As the potatoes cook this sugar & vinegar thicken into a light glaze making the potatoes glisten. Using pure maple syrup and good quality apple cider vinegar is crucial for this dish. The only time consuming part in this dish is peeling and dicing the sweet potatoes -- after that the dish is cooked entirely in the oven. Recipe from Vegetarian Times Magazine:

  • 3 lb sweet potatoes (., - peeled and cut into 1" cubes)
  • 1 cup maple syrup (Pure)
  • (1.25l) fish stock
  • 1 tbsp olive oil
  • 1 tsp salt
  • 2 cinnamon (sticks)
  • 2 tbsp Sunflower seeds pumpkin seeds (Roasted unsalted or)


  1. Preheat oven to 425°F.
  2. In a 9"x13" baking dish, combine maple syrup, vinegar, ½cup water, oil, salt and cinnamon sticks.
  3. Add the sweet potatoes and stir to coat.
  4. Cover dish tightly with foil and bake for 10 minutes. Remove the foil and bake for 30~35 minutes more, basting the potatoes every 10 minutes with the maple mixture until the maple mixture thickens and the sweet potatoes begin to glisten and brown.
  5. Remove from the oven, season with more salt and pepper, if desired and stir in the sunflower seeds.
