Try this super easy and tasty prawn (shrimp) and vegetable ramen which is packed full of goodness so you will be ticking off your 5 a day in no time!

Ingredients

  • 12 raw king prawns ((shrimp))
  • 250 g shiitake mushrooms (chopped into quarters)
  • 2 tsp sesame oil
  • 2 tsp fresh ginger (crushed)
  • 3 garlic cloves (crushed)
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp mirin ((Japanese rice wine))
  • 500 ml chicken stock (good quality )
  • 1 red chilli
  • 1 pak choi
  • 10 pieces tender stem broccoli
  • ½ carrot (cut into semi-circles )
  • 1 handful mange tout
  • 2 handfuls kale
  • 3 spring onions (chopped )
  • 2 nest rice noodles
  • 1 fresh coriander


Method

  1. Heat the sesame oil in a large saucepan over a medium heat. Add the garlic and ginger and cook for 2 minutes.
  2. Add the soy sauce and mirin, stir to combine. Cook for a minute then add the chicken stock.
  3. Cover and bring to the boil. Turn down and simmer. And add the mushrooms.
  4. In a separate saucepan add the noodles to boiling water and cook to the packet instructions.
  5. Add all the veg and cook for 3 minutes. Sprinkle with fresh coriander.
  6. Add the prawns and when they have changed colour they should be ready - this will take 2-3 minutes.
  7. Add the noodles to one side of your bowl and ladle the veg broth and garnish with more coriander. Enjoy!
