Homemade, no bake, gluten free, AND vegan!? All words to describe these amazing protein balls that take no time at all to make!

Ingredients

  • 1½ cup quick oats
  • 2 scoops vegan protein powder
  • 1 banana (mashed)
  • 2 tbs coconut oil ( melted and slightly cooled )
  • ¼ cup peanut butter
  • ¼ cup unsweetened shredded coconut
  • ¼ cup water
  • ¼ cup vegan chocolate chips
  • (1.25l) fish stock


Method

  1. In a large bowl, mash the banana
  2. Add the coconut oil, and peanut butter to the banana and stir to combine
  3. Add in the oats, protein powder and shredded coconut
  4. Stir the mixture, and add water. I recommend using your hands to make sure everything is fully incorporated (the amount of water you need may need to be adjusted depending on the composition of the protein powder you use and the degree to which it soaks up the liquid)
  5. Fold in the chocolate chips and/or any other mix ins you like
  6. Roll into golfball sized balls and place in a parchment lined container
  7. Place in freezer for about an hour to set
  8. Once set, remove balls from the freezer
  9. Store in an airtight container in the refrigerator. These keep quite well, I’ve stored them for 1.5-2 weeks in the fridge with no spoilage
