Preheat oven to 400 degrees. Place sweet potato wedges on a greased baking sheet and toss with oil, salt and pepper. Choose a spice combination (Mexican, Indian or Italian) and whisk together in a bowl until combined. Add spice mixture to oiled sweet potato wedges and toss to coat. Roast 35-40 minutes, until soft on the inside and crispy on the outside. While sweet potatoes roast, whisk together aioli ingredients until combined. Refrigerate until ready to use. Serve spice-roasted sweet potato wedges with garlic aioli for dipping.
