This super-refreshing, simplified Greek-style cucumber, feta & pomegranate salad is perfect for a fast and fresh meal or as a side.

  • half a cucumber
  • 1 tsp Feta (about 20g)
  • 1 tbsp pomegranate seeds
  • 1 tsp olive oil
  • salt, pepper


  1. Slice the cucumber as thinly as you can (use a mandoline if you have one) and arrange the slices onto a plate or serving dish.
  2. Sprinkle the feta and pomegranate seeds on top.
  3. Season with salt & pepper, drizzle with olive oil and serve immediately.
