Cucumber, feta & pomegranate salad (V)

This super-refreshing, simplified Greek-style cucumber, feta & pomegranate salad is perfect for a fast and fresh meal or as a side.
- half a cucumber
- 1 tsp Feta (about 20g)
- 1 tbsp pomegranate seeds
- 1 tsp olive oil
- salt, pepper
- Slice the cucumber as thinly as you can (use a mandoline if you have one) and arrange the slices onto a plate or serving dish.
- Sprinkle the feta and pomegranate seeds on top.
- Season with salt & pepper, drizzle with olive oil and serve immediately.
