Fried egg tacos? YES PLEASE! Enjoy this Mexican-style brunch it is truly mouth watering and packed full of flavour!

  • 4 free range eggs
  • 4 mini tacos
  • 1 avocado
  • 4 baby tomatoes
  • 1 half lime juice
  • 1 handful coriander
  • ¼ tsp smoked paprika
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp rapeseed oil
  • salt and pepper


  1. De-stone the avocado and slice it still in its shell, scoop both halves out and put into a bowl along with the tomato, lime and coriander. Using a balloon whisk crush the ingredients and mix.
  2. Heat or cook your tacos according to the instructions. Cook your eggs in an egg pan if you have one to get them perfectly round, using a small amount of the rapeseed oil on each.
  3. Place the egg onto the taco and sprinkle the smoked paprika, salt, pepper, cheese and coriander.
  4. Serve with the crushed avocado and tomato and enjoy!
